This obsession drove Davide Diana and Francesco Lo Coco to create the best pasta possible, because we give a fuck. We seriously care. We care about taste, heritage, farmers, nutrition, the environment, and the science. We respect the grain, and each hand it passes through in order to reach your table. We focus on the production of fresh, stuffed, and dried pastas using carefully selected and ethically sourced ingredients. All of our products are made using only the finest grains with an emphasis into the research of the best flours --- particularly ancient Sicilian grains, Timilia and Russello.
